Or maybe 13 things to do with leftover chicken!<BR/><BR/>I know that this is WAY too late to help you, but I have a great use for left over chicken (or not-leftover, LOL, I made it tonight starting from raw) and you can always use it the next time you have left over chicken<BR/><BR/>Green Chili Enchiladas<BR/>1 lb of chicken cooked and cut up (I have even used canned chicken)<BR/>1 small can of green chilies<BR/>1 block of cream cheese<BR/>1 can of green chili enchilada sauce (if you use the "Old El Paso" brand, the exact recipe is on the lable)<BR/>flour tortillas<BR/>shredded cheddar (I use the pre-shredded mexican blend)<BR/><BR/>Put the chicken, cream cheese, and chilies in a pan and cook over medium heat until cream cheese is melted. Remove from heat, spoon chicken mixture into tortillas, roll up (don't worry about burrito style or anything, I always leave the ends open) and place into a casserole seam side down. Emma is so growing up.<BR/><BR/>A co-worker told me that she had mixed potates (I presume boiled or baked and cubed); vegetables (she used cauliflower and broccoli); chicken and italian dressing; heat and serve.
